It is just the same with gels or with a TV set.  Try
this - take two household spotlights or floodlights -
the kind with a built-in reflector.  Put a red gel
in front of one, and a green gel in front of the
other.  Shine them on a while wall.  What color
do you see?

Now, take two gels, one cyan and one yellow.  Lay
them one on top of the other and hold them up to
a white light.  Look through them at the light.
What color do you see?

If you're stacking gels to create a color, use the
subtractive system.  It you're casting individually
colored lights to produce a color, use additive.
