If you want to eliminate the AVC, remove one of the valves in the
preamplifier. (Cant remember which one off hand)
I have a mono Continental 1, and it is either an ECC83 or ECC82 on the
preamp that you need to remove. I still think it is only 1 valve to remove,
even though yours is Stereo.

You may find you have an ECC82 in the ECC83 slot, and that is making the AVC
last longer, so check your valves as to a certain degree the 82s and 83s are
swappable.

When removing the valve, play a record at low volume only. You will find one
of the valves will bump the sound up dramatically, removing the AVC. That
isa the valve you need to look at.

There are quite a few ECC82s and 3s on a Continantal, so swap them around to
see if it makes any difference.
May be duff valve or valve in the wrong place.
When the amp is operating correctly, the AVC does its job well on the
Continentals, and is not normally noticeable at all.

  Welcome !
  What you are hearing is the Automatic Volume Compensator (or Control)
(AVC) doing it's job. There are a couple of things that affect it, that you
might just want to "tinker " with. 
  Do you have the Service Manual?  If so, check the needle set-down
adjustment. Also, there maybe a switch on the AVC unit that allows for more
or less of a time adjustment--I'm not sure if that model had such a switch
or not. The other thing you can do is ( I think- on that model), eliminate
the AVC section alltogether. I believe that it was still an option on the
Conti 2's.
